#RECIPE : No-Bake Strawberry Icebox Cake

INGREDIENTS

2 pounds fresh strawberries, washed and patted dry

3 3/4 cups heavy cream, divided

1/3 cup powdered sugar

1 teaspoon vanilla

1/2 teaspoon rosewater, optional

4 sleeves (about 19 ounces, or 24 to 28 whole crackers) graham crackers

2 ounces dark chocolate, finely chopped

Instructions

Take out a few of the fine-looking strawberries and set them aside for the garnish. Hull the the rest of the strawberries and cut each berry into skinny slices.

With a hand mixer or inside the bowl of a stand mixer, whip three 1/2 cups of cream until it simply holds stiff peaks. upload the confectioners sugar, vanilla, and rosewater (if using) and whip to combine.

unfold a small spoonful of whipped cream on the bottom of a 9x13-inch baking pan, or a further sized platter. Lay down 6 graham crackers. lightly cover the top of the graham crackers with more whipped cream, after which a single layer of strawberries. Repeat 3 times, until you've got 4 layers of graham crackers. unfold the final of the whipped cream over the top and swirl it lightly with a spoon. upload some greater strawberries.

To make the ganache, heat the final 1/4 cup cream until bubbles shape round the edges, then pour over the chopped chocolate. permit it stand for a couple of minutes, then whisk till the mixture is thick and smooth. Drizzle this over the layered dessert with a spoon, or switch to a squeeze bottle and use that to drizzle.

Refrigerate for at the least four hours, or till the crackers have softened completely. Garnish with extra berries.

Recipe Notes

building the cake on a platter in preference to in a pan: you could build this cake in a 9x13-inch pan as I mention above, or you can build it up on a platter as proven right here. either manner works nicely. The 9x13-inch pan makes it less difficult to transport the cake, however if you're staying at home, the platter makes it appearance a touch fancier. You do not need to do whatever differently whilst constructing it on a platter. I do, even though, want to smear a chunk of cream on the bottom of each cracker as I add it to the stack to keep it steady and in place.
